recipe: roast squash, sweet potato/yams and apple

the combination of squash, sweet potato/yams and apple sounds so great that i was eagerly awaiting the day i could make this (after we went through some leftovers)! i added very little oil and held off on the vinegar because i used this dish as an intro for k to olive oil. next time i make it i’ll add the vinegar and see if it bumps up the flavor! but without it, it was still a sweet flavorful veggie dish.

  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp apple cider vinegar *optional

recipe: zucchini and sweet potato rolls

it’s fun when you can make something pretty with food. japanese cooking is known for this with its sushi rolls and beautiful food packages. in some way this takes on the beauty of the rolls with vegetables instead of seaweed, rice and fish. zucchini around sweet and savory vegetables. yum!

recipe: italian seasoned steamed vegetables

it is my first attempt of seasoning k’s food and when better than for a happy holiday occasion? italian seasoning seems like a safe bet. hope k likes it!


  • 1 cup steamed broccoli
  • ¾ cup boiled corn
  • 1 cup steamed sweet potato / yam
  • 1 Tbsp italian seasoning (i.e. mix of basil, oregano and thyme)

jerk sweet potato fries

ever since i added some lime and cayenne to my sweet potato fries, it has been one of my favorite recipes and it made me open to adding spices to sweet potato. so when i found this recipe i was excited at a variation. sweet potato with jerk. cool kick!


  • 2 sweet potatoes, peeled and cut into 1/4″ thick sticks
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon jerk seasoning
