burgers happen to be something that our whole family can eat together despite k’s allergies. so it was a easy Fourth of July meal: easy peasy burgers and grilled vegetable skewers!

our neighbor gave us the extra sauce from their yummy super bowl worthy wings, which was perfect because i wanted to try the flavoring with cauliflower! to save some for k, i made some without the wing flavoring.
while the flavoring was nice, the batter made the coating of the cauliflower a little thick. next time i may try it with dry flour instead of batter, like the wings recipe per my neighbor.

i had a great experience with roasting chicken with lemon before – the results was so tender – so i was very excited to try this recipe. as expected, it was delicious!

- one 2- to 3-pound farm-raised grass fed free range chicken
- coarse salt and freshly ground black pepper
- 1 organic lemon, halved
i chose different vegetables than i used for thanksgiving meal 2014-une and baked them instead of steam. i used the same italian seasoning but to bump up the flavor, i added some drippings from the roast chicken. the flavor was a success. YAY!

- 1 Tbsp italian seasoning (i.e. mix of basil, oregano and thyme)

it was a little tricky finding the right recipe to make pumpkin pie but with the plethora of recipes to be found online, i was able to mix and match one pumpkin pie recipe for the pie crust *see note 1 with a different pumpkin pie recipe for the filling *see note 2. i did make a few tweaks to both the crust and filling recipes to accommodate the food k has been introduced to so far.

- 3 Tbsp applesauce
- 2 to 3 Tbsp ice cold water or ice cold saved liquid
- ¾ cup pumpkin puree
- ½ cup organic applesauce
- ½ medium ripe organic banana
- ½ oz milk
- ½ tsp cinnamon
i wanted to find a roast chicken recipe that works with k’s food allergies but is also safe to share with k’s classmates at daycare. not only did i find a crazy simple recipe, it is by Thomas Keller – owner of Per Se, where i had the ultimate dining experience a few years ago. that means this recipe is a guaranteed delicious main course!
