recipe: avocado crab salsa

quinoa enchilada casserole with avocado crab salsai had a big ripe avocado so i wanted to use it before it goes bad. then m picked up some lump crab meat so i looked for a recipe that had both and this was it!

recipe: roast cinnamon squash and beets

after trying the roast squash, sweet potato/yams and apple dish, i found this roasted squash and beets recipe and knew it would be a good side dish as well. the apple cider vinegar and cinnamon gave it a nice aroma. while the original recipe included maple syrup but i didn’t think it was necessary so i just skipped it.

  • 1 small butternut squash
  • 2 medium beets
  • 1 Tbsp ground cinnamon
  • 1 Tbsp extra virgin olive oil

recipe: roast squash, sweet potato/yams and apple

the combination of squash, sweet potato/yams and apple sounds so great that i was eagerly awaiting the day i could make this (after we went through some leftovers)! i added very little oil and held off on the vinegar because i used this dish as an intro for k to olive oil. next time i make it i’ll add the vinegar and see if it bumps up the flavor! but without it, it was still a sweet flavorful veggie dish.

recipe: italian seasoned baked vegetables

i chose different vegetables than i used for thanksgiving meal 2014-une and baked them instead of steam. i used the same italian seasoning but to bump up the flavor, i added some drippings from the roast chicken. the flavor was a success. YAY!

recipe: cheesy mashed potato

usually when we usually mashed potato it’s with lots of garlic and butter – or – it’s with gravy. but since we have to skip garlic due to k’s food allergies and i hadn’t introduced k to butter yet, i opted for a simpler recipe – just adding cheese! it ended up being a favorite for not just the kids but also with the adults! yay!
