after making the grilled mahi mahi with tamari and orange sauce, i had a lot of sauce leftover and i didn’t want to waste it so i saved it for another dish. i picked up some chicken breast and asparagus and dipped them in the leftover tamari and orange sauce. score! with the sauce on the grill, i was able to dilute it and lightly fry some leftover rice with the flavor. i used to love going to small taco places and my favorite concoction was chicken fajita and guacamole. so i decided to make it myself!
the combination of chicken fajita and guacamole is perfect – i love it!
- 1 small avocado
- 1 plum tomato
- 1 tablespoon lime juice
- 4 ounce chicken breast
- 2 tablespoons olive oil, divided
- 1 colored bell pepper, cut into long thin slices
- 1/2 medium onion, cut into long thin slices
- 5 crimini mushrooms, cut into thin slices
- sea salt and ground black pepper, to taste
- 1/2 cup shredded jalapeno jack cheese – or – other cheese of your preference
- 4 medium whole wheat tortilla
i bought a bag of sweet potatoes a week ago and while i have a few sweet potato recipes, i went in search for a new one!
when i found this recipe from bobby flay, my first thought was of this amazing corn-on-the-cob with lime, chili pepper and cheese from café habana. just the memory of it made me curious to give this recipe a try even though i didn’t know how the similar flavors would work with sweet potato.
Ohhh Mmmm Goodyness! the lime and cayenne flavors play with each other as well as brings out the sweetness of the sweet potato. it is SO good and it’s healthy! trust me – you’ve got to give this recipe a try!
- 3 sweet potatoes, unpeeled
- pinch sea salt
- 1 tablespoon finely grated lime zest
- 1/4 teaspoon cayenne pepper
- 1 tablespoon canola oil
- 1/4 cup finely chopped fresh parsley
still working on my bag of arugula had me searching for fun salad recipes and i am so glad i found this one. the dressing is so good – the roasted red bell pepper with garlic and vinegar is such a great flavor combo and add the arugula and shrimp – LOVE it!
i didn’t top the salad off with the two cheeses because the dressing had so much flavor – i didn’t think it was necessary. don’t miss it!
5 years later, this salad still one of my favorites. now with a little one who has a lot of food allergies, i substituted chives instead of garlic and added butter instead of olive oil. delish! one of my favorite dishes EVAR!

prosciutto and arugula is a beautiful combination – as i have tasted in prosciutto with pears and arugula recipe i’ve had before. so, how about having it in a sandwich? prosciutto, arugula and cheese in a ciabatta bun. yum! Ingredients 1 ciabatta or focaccia bread 1 slice of prosciutto 1/2 slice of Trader Joe jalapeño yogurt cheese handful arugula Preparation Cut the bread in half. while i think the maple cream sweet potato soup could work well on its own, i also wanted to try this dish as rachael ray created it! the dippers are a nice compliment to the soup. since the soup is a little sweet, the cheesy flavor from the dippers give a nice sweet and savory mix to the dish. i really enjoyed it! now, this sammie can stand on its own as a great grilled cheese sandwich. i have added tomatoes to my grilled cheese sandwiches but that was the extent of my creativity! it is fun to learn a … Continue reading grilled cheddar apple dippers
i may be allergic to peaches but it doesn’t mean i can’t tell what would be a great flavor dish – or in this case – dessert. i’ve grilled pineapples and mangoes before, so i know that fruit is awesome when it’s grilled! anyhoo, i made this for my family and they loved it. peaches softened by the grill, sweetened by the maple syrup and then crunch-e-fied by the granola. i wouldn’t necessarily say this was a healthy dessert but from the looks of the clean plates, it was a hit!
