not really a recipe: leftovers shepherd’s pie

after seeing various blips in social media about Pi Day while planning tonight’s dinner, i saw that we had a lot of single portions of soups and stew in our fridge. the last week had been rather cold so we kept our tummies warm and filled with chicken soup, vegetable stew and vegetarian chili.

so as a fun homage to PiE Day and early celebration of Irish cuisine for St. Patrick’s Day, i decided to make “leftover shepherd’s / shepherdess (vegetarian) pies” by each finishing a soupy dish topped off a nice portion of newly made mashed potatoes. viola, dinner!

it’s simple. it’s filling. it cleaned some space in the fridge. and dinner is done! good night.
