recipe: bacon egg and brioche open faced sandwich

my newest addiction comes from Trader Joe’s and it is in the form of soft, cake-like brioche bread. while i could enjoy each slice plain out of the bag one by one, today, i chose to make some open faced sandwiches with bacon and egg. it was so delicious!


  • 2 Trader Joe’s Sliced French Brioche
  • Applegate Naturals Hickory Smoked thick cut bacon
  • 3 cage-free eggs
  • salt & pepper to taste


cook bacon over a grill.

beat eggs and cook in large frying pan. cut to square shape, approximate size of the brioche bread.

toast the brioche bread lightly.

layer bacon on top of a slice of brioche and top with egg.

enjoy with a side of bacon grease flavored potatoes.
