i was finally going to share dumplings with my little one and i was so excited! so i created a special filling with pork, vegetables and chives. instead of using eggs to bind the mix together, i used ground flax. it was a great mixture of ingredients.

- small and medium-sized mixing bowls
- slotted spoon

ingredients
2 Tablespoons ground flax
- 6 Tablespoons water
- ½ cup bamboo, chopped to small bits
- ½ cup celery, chopped to small bits
- ½ shiitake mushrooms, chopped to small bits
- ¼ scallions, minced
- 2 pounds ground pork
- salt and pepper, to taste
preparation
in a small mixing bowl, add ground flax and water. stir a little and set aside. chop all vegetables into equal sized small bits. beat the ground flax and water together for a minute.
add vegetables, scallions, ground pork and flax mix into a medium sized mixing bowl. add salt and pepper. mix all ingredients together thoroughly.
heat several quarts of water in a pot. scoop a healthy portion of pork mix into your palm. shape into a triangular patty. gently place into the boiling pot. cook thoroughly.
use a slotted spoon to scoop cooked pork filling to a plate. set aside to cool.
