recipe: cauliflower and citrus salad

for a refreshing summer meal, this salad is the perfect blend of sweet and savory. the original recipe had a spicy vinaigrette with red pepper, anchovies and capers so I simplified it for the little one but it is just as delicious! it is even better after the vegetables have been refrigerated. this recipe is one i’ll definitely make again and again.

cooking tools

  • 1 pressure cooker

ingredients

cauliflower and citrus saladsalad

  • 1 small cauliflower
  • 1 lb broccoli
  • 1 cup water
  • 2 orange

vinaigrette

  • 1 orange zest
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp extra virgin olive oil
  • salt & pepper

preparation

salad

  1. cut cauliflower and broccoli into florettes
  2. add vegetables and water in pressure cooker
  3. choose manual setting with low pressure for 7 minutes
  4. allow to cool and then put in a salad bowl
  5. cut oranges into thin slices and add into salad bowl

vinaigrette

  1. add zest, vinegar, oil, salt & pepper to a dressing bottle
  2. shake

add vinaigrette to salad as desired. enjoy.
