scallion cucumber

my favorite appetizer at grand sichuan isn’t a spicy dish at all! it’s this cold cucumber with scallion sauce. i loved it so much that i tried making it at home and it didn’t come out too bad! The best part is at the restaurant, it’s a little too salty for my taste so my version is exactly to my taste!

Ingredients

  • 5 large scallions – dark green part only, minced
  • 1 tablespoon sesame oil
  • 2 english cucumber
  • 2-3 large garlic cloves
  • sea salt, to taste

Preparation

Mix minced scallions with sesame oil in a medium mixing bowl. Set aside.

Cut cucumbers in half, lengthwise. Using a spoon, scoop out seeds from the center. Cut each half into 3 long strips and then to long bite sizes. Put cucumbers into the scallion mix. Grate garlic cloves over the mixture. Add salt to taste. Mix well.

Marinate for 1 hour in the fridge then serve!
