m was in a cooking mood and found this recipe to make. the original recipe called for 1/4 cup of butter but m substituted it with extra virgin olive oil and some leftover broth. i think it was a great substitution bcuz instead of the butter, the flavors of the mushrooms and onion were brought out more. yum!
- 4 skinless, boneless chicken breast or thighs
- 1 teaspoon paprika
- sea salt and black pepper to taste
- 1 pinch garlic powder
- 1 tablespoon extra virgin olive oil
- 2 tablespoons broth, any kind
- 1 onion, sliced into thin rings
- 1 pound fresh mushrooms, sliced
Pound chicken breasts to 1/2 inch thickness. Sprinkle both sides of each chicken breast liberally with paprika, pepper and garlic powder with a little salt.
In a large skillet, add oil and broth over medium heat. Arrange chicken breasts in the pan, cover, and cook for 10 minutes. Turn chicken breasts over, and layer the thinly sliced onions and mushrooms on top of the chicken. Cover, and cook for 10 minutes.
Remove lid, and mix onions and mushrooms into the sauce. Reduce heat to low, and cook uncovered for 5 minutes.
