0ne of my fav fast food joints is cosi. simple but flavorful sandwiches and creative and robust salads. plus their bread – SOOO good – and because they cut their bread to be perfect straight lines, i get to enjoy the scraps while waiting for my food. yum yum yum!
their Adobo Lime Chicken Salad is my recent favorite. since i recently made a dish with adobo sauce, i knew i would like the salad as soon as i read the description: The flavorful adobo-rubbed chicken balanced with the taste of corn, beans, peppers and pico de gallo makes for an exciting Latin-inspired salad.
it was as i expected – a hit! i couldn’t wait to have it again. ! since i knew the main flavor, i picked up the ingredients from the salad and i attempted to recreate it at home. not bad! i made 2 versions, 1 vegetarian version, which would be perfect as a side dish and 1 recreating the cosi salad with lettuce and chicken. i love when eating out inspires me to eat at home! now i can enjoy it more often. yay!
For the dressing
- 1 tablespoon adobo sauce
- 1 lime, juiced
- 2 teaspoons extra virgin olive oil
- 1 teaspoon apple cider vinegar
- sea salt and ground pepper, to taste
For the salad (vegetarian option)
- 2 tablespoons sun dried tomatoes, julienned
- 1 can of black bean
- 1 can of corn
- 1 colored sweet bell pepper (red, orange or yellow)
- 1/2 small red onion, diced
- 6-7 leaves of romaine lettuce
For the chicken (non-vegetarian option)
- 2 chicken breast
- 1 chipotle in adobo sauce, diced
- 1 teaspoon of the adobo sauce
Mix all the ingredients for the dressing in a large bowl and set aside.
Prepare all the vegetables and add to the large bowl. Toss well and serve!
If including chicken, coat the chicken breast in chipotle in adobo sauce and let it marinate for an hour. Then grill the chicken until fully cooked. Slice into long thin slices and add to the salad.
