competwition #2 is a recipe for one of my favorite dressings: caesar dressing. now i LOVE my caesar salads but i am not kidding myself – i know that caesar dressing isn’t the healthiest dressing. so i HAD to try jamie oliver’s caesar on the light side.
today i made the lighter caesar salad – i made a few adjustments as i used fat free greek yogurt, instead of 2%, and only 1 tablespoon of oil, instead of two. on my chicken sandwich, i skipped the cheese (since there is cheese in the dressing) and i topped a huge serving of caesar salad with the chicken, tomato, avocado, persian cucumber in between two slices of multigrain toast. the verdict? YUM! since it’s a competition, here’s my picture to share.
- 1 head romaine lettuce
- 1/3 cup fat free Greek yogurt
- 1 tablespoons olive oil
- 1 tablespoon grated Parmesan cheese, (plus 1-ounce for sprinkling over the top; optional)
- 2 teaspoons Worcestershire Sauce
- 1 clove garlic, minced
- juice of 1/2 lemon
- 2 chopped anchovy fillets
- sea salt and freshly ground pepper, to taste
Wash lettuce and dry it. Cut into chunks.
Whisk the yogurt, olive oil, grated Parmesan, Worcestershire sauce, garlic, lemon, and anchovy together ina serving bowl. Season with salt and pepper.
Toss the lettuce with the dressing and scoop the salad into serving bowls. Top with additional parmesan, if desired.
