baked potato with essence

when m made emeril’s infamous vegetarian chili, we had a lot of essence left over. since its all spices, we just kept it in the fridge and added it to anything we made that could use an additional kick.

so today, we had a simple meal with grilled tofu with pesto and a baked potato. m decides to dress up the baked potato with some cheese and broccoli but to add even more flavor: essence! it makes a regular baked potato a notch higher.

sprinkle on some essence!


  • 1 medium potatoes
  • 2 cups of broccoli
  • 2 slices of cheese
  • Emeril’s essence (see below)


Bake the potato.

Top with cheese and broccoli. Add essence – as much as desired!

EMERIL’S ESSENCE CREOLE SEASONING (also referred to as Bayou Blast)

Essence Ingredients

  • 2-1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme

Essence Preparation

Combine all ingredients thoroughly.

Yield: 2/3 cup
