whenever my family and i would go for italian, my mom would ALWAYS get chicken parmigiana. there was something about that dish she couldn’t resist! me, on the otherhand, not a big fan.
so tonight is earth hour and i had about half an hour to make dinner so i wanted to whip up something quick and then eat dinner by candlelight with no electricity.
i had some leftover mozzarella cheese in the refrig, so i thought i’d make a quick meal and for some reason, chicken parm just called my name! pair it with steamed broccoli and pasta with garlic and you have a completely awesome meal!
- 2 slices of skinless chicken breast
- 1 tablespoon olive oil
- sea salt and pepper, to taste
- 2 slices mozzarella cheese, each 1/4 inch high
- 1 cut marinara sauce – no sodium
Sprinkle salt and pepper on both sides the chicken breast. In a medium sized pan, heat up the oil in medium heat and place the chicken breast in the pan. Cover the pan. Cook the chicken until fully cooked.
Next add one slice of mozzarella cheese on top of the chicken breast and then pour some marinara sauce on top. Cover the pan again and heat until the cheese has melted.
Remove each cutlet and place on a plate.
