garlic snap pea salad

i love my salads and i love finding new ways to spruce it up! so here’s a lively salad with snap peas. yum!

Ingredients

  • 8 cloves of garlic, minced
  • 1 pound of snap peas
  • 3 tablespoons extra virgin olive oil, divided
  • ground black pepper
  • sea salt
  • 1 soft avocado, cubed
  • 2 persian cucumbers, chopped
  • 1 yellow or orange bell pepper, choppped
  • 1/2 pint grape tomatos
  • 2 leaves romaine lettuce, chopped

Preparation

In a saute pan, heat 1 tablespoon of extra virgin olive oil with minced garlic in medium heat. Add snap peas, pepper and salt, and saute. Sprinkle a little water over the snap peas and then cover the saute pan. Let it cook for 3-5 minutes (depending on how crunchy you like your snap peas). Uncover and set aside to cool.

Put all chopped fresh vegetables into a large salad bowl. Add remaining 2 tablespoons of extra virgin olive oil and pepper, and toss. Then add cooled sugar snap peas and mix. Add salt to taste.
