shrimp and tomatoes with basil-garlic sauce

so i was shopping for groceries and as i was waiting on line, i noticed the back of my basil container from Infinite Herbs had a recipe for pan seared shrimp. it looked very tasty and so easy to make that i decided to give it a try!

i’m glad i did! it was definitely a quick recipe to make! the bread crumbs give an unique texture and it was quite flavorful!

i’ve purchased this basil before but i didn’t notice the recipe. so it goes to show that you can find inspiration anywhere as long as you take the time to  look!

Ingredients

  • 1 pound shrimp, cleaned and deveined
  • 1 pint grape tomatoes
  • 2 tablespoons chopped garlic
  • 1 tablespoon, basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon margarine from a tub
  • sea salt
  • ground pepper
  • 1/4 cup wheat bread crumbs (1 slice of bread chopped)

Preparation

In a large sauté pan heat olive oil. Pan sear shrimp for 3-4 minutes on each side. Add tomatoes, garlic, margarine, salt and pepper.

Cook for three more minutes. Turn off heat, toss with bread crumbs and basil. Serve.
