last week, i was watching the rachael ray show with jessica seinfeld as a guest. i knew jessica seinfeld’s cookbook a few years but i didn’t know much about her style of cooking. anyhoo, it was interesting to learn how she finds ways to “hide” nutrition into meals but still have it taste good.
the other thing they talked about was an online site where she made home videoes to help a friend cook. i found this recipe lemon halibut over spinach on the site and it looked so easy, i had to give it a try!
true to her word, it was a quick and tasted good! flavors were very simple but worked well together! the original recipe is with halibut but i used mahi mahi. if you’re ever looking to make a light, healthy meal in very little time, this is definitely the recipe for you!
- 1 head garlic, chopped
- 16-ounces baby spinach
- 1-1/2 tablespoons extra virgin olive oil plus more for rubbing
- 1-1/4 teaspoon salt
- 4 (4-ounce) halibut fillets, skin removed
- 1 lemon cut into 8 slices
Heat the oven to 450 degrees F.
In a large bowl, toss the spinach with chopped garlic, 1-1/2 tablespoon of the oil and 1/4 teaspoon of the salt and spread evenly on the sheet pan.
Season the halibut with the remaining teaspoon of salt and rub with a thin coat of olive oil. Place on top of the spinach and top each fillet with 2 lemon slices.
Bake until the halibut flakes easily, 7-8 minutes.
