black bean and pineapple salad

i made two black bean and corn salads today since they had similar ingredients and i wanted to try them both! this one includes fruit, like the corn and bean salad with basil-lime vinaigrette i made last year, but it includes pineapple instead of mango. it also has an additional kick with the cumin and jalapeno spice. give this a try too!

Ingredients

For the dressing

  • 1 tablespoon chopped flat leaf parsley leaves
  • 1 jalapeno, seeded and minced
  • 4 tablespoons cider vinegar
  • Juice of 1/2 lime
  • 3 tablespoons honey – or –
    5 tablespoons pineapple juice
  • sea salt, to taste
  • 1 teaspoon black pepper
  • Pinch ground cumin

For the salad

  • 1 (15-ounce) cans black beans, drained
  • 1 (15-ounce) can corn, drained
  • 2 plum tomatoes, diced
  • 1/4 cup diced bell pepper, any color
  • 1/4 cup diced red onion
  • 1/4 cup diced green onions
  • 1/4 cup diced pineapple

Preparation

Mix all dressing ingredients in a salad bowl. Add salad ingredients and mix. Refrigerate for 1 hour.
