in bobbly flay’s original recipe, he paired his garlic risotto cakes with a whole sea bass that is so easy to make!
instead of making the whole fish, i modified the recipe to just a fillet. browning the skin side will give the fish a nice crisp while the rest of the fish will be soft and tender. sea bass is a very rich fish so just the simple oil, salt and pepper seasoning does the trick. it is amazing!
the seasoned sea bass is perfect with a risotto cake. restaurant quality taste and look – yum!
- salt and pepper
- 1 pound black sea bass fillet
- 1 tablespoon extra virgin olive oil
Preheat oven to 400 degrees F.
With a sharp knife score bass on the side with the skin. Season bass lightly on both sides with salt and pepper. Heat oil in a large saute pan over medium heat. Add bass to pan, skin side down and brown it on the skin side. Transfer pan to oven and cook bass for 5 to 10 minutes or until cooked through.
Transfer fish to a plate and serve with skin side up.
