pineapple mango ice

even though it’s still cold outside, we can still enjoy frozen treats! i had a beautiful pineapple and ripe mango at home, so i thought i’d try this icy recipe that i found a few months ago. pineapple and mango are two of my favorite fruits so why wouldn’t the frozen combo of the two be just as good or even greater? ah … cool, refreshing, fruity yumminess!

the sweetness comes from the fruit and is enhanced by honey and syrup. i modified the recipe to add just half of the honey and syrup to the first blend and tasting the mixture because depending on how sweet the fruit you’re using, you may not need a lot of additional sweetness! you be the judge.

if you enjoy this combo, you may be inspired to try the other fruity variations – i can’t wait!

  • 2 cups cubed pineapple (approximately 1/4 of a fresh pineapple) or 2 (8-ounce) can packed in its own juice
  • 2 cups cubed mango
  • 1/2 cup water
  • 2 tablespoon fresh lemon juice and zest of the lemon
  • 1/4 cup pure maple syrup, divided
  • 1/4 cup pure honey, divided
  • sugar, if needed

Blend pineapple, mango, water, lemon juice  and half of 1/4 cup honey and syrup each in blender or food processor until smooth. Taste; add remainder honey and syrup if needed. If fruit was not very sweet, add sugar by tablespoons. Pour into 9-inch square baking pan. Freeze 2 hours or until firm.

Cut into cubes. Place in processor. Whirl until smooth. Serve and enjoy!

To save, place in chilled airtight food storage container. Freeze up to 2 months.
