sweet and simple recipe!
- 5 cups sweet potatoes, peeled and chopped
- 2 tablespoons of margarine from a tub
- 1-2 tablespoons maple syrup
- 1/4 teaspoon ground cinnamon
- pinch sea salt
Add the potatoes to a large Dutch oven and cover with water. Bring to a boil over medium-high heat. Reduce the heat and simmer or until the potatoes are tender, about 8 to 10 minutes, drain well. Return the potatoes to the Dutch oven and add the margarine, cinnamon, and salt. Add maple syrup to taste *depending on how sweet potatoes are, you can add more or less syrup. Beat at medium-low speed with an electric mixer or mash with a potato masher until smooth. Transfer to a serving bowl and serve hot.
