thinking of apple desserts reminds me of a quick and simple treat that i recently made. but when i tried looking through my list of tried and true dishes, i couldn’t find the recipe! i’m playing this by ear so i don’t forget to make this again. i hope to find the original recipe somewhere soon! it is SO easy to make and the result is an apple-y, tasty and crunchy!
- 2 apples (slice each apple into approximately 16 to 20 thin slices)
- 1 (6.75-ounce) apple juice ~ I prefer Apple & Eve® 100% Apple Juice – No Sugar Added
- 2 (9-inch round) tortilla
- 1 teaspoon pumpkin spice
- 1/2 teaspoon of soft margarine from a tub (not stick)
- sprinkle brown sugar
Cook sliced apples with apple juice and pumpkin spice until the apples are soft and the juice is reduced down to a thick syrupy consistency.
Spread a very light coating of margarine on a tortilla and sprinkle with brown sugar. Toast tortilla in a toaster a toaster oven until tortilla is crisp.
Put half of the syrupy apples on top of each tortilla. Serve immediately.
