school lunches reforms

with work from a lot of great movements from first lady michelle obama, jamie oliver and chefs, there’s a change in the school lunches: whole milk just got expelled from school and white bread is up for suspension.

this Wednesday, the healthy school lunch movement earned a $3.2 billion dollar raise, and with it a new set of mandates for cafeterias nationwide. the U.S. Department of Agriculture announced a federally funded, five-year plan to improve cafeteria food and reduce childhood obesity.

the new guidelines, impacting about 32 American million kids, will guarantee more fruits, veggies and whole grains on the lunch table. full-fat milk is off the menu, meaning kids will choose from low-fat or fat-free. Schools are also responsible for proper portion sizes. and vending machines on school property will be getting a revamp with healthier options too.

over the next three years, schools across the country – from Kindergarten through twelfth grade – will be required to implement these changes.

with the announcement, the USDA released sample “before and after” menu for the average elementary school to reflect the improvements the budgetary boost and guidelines will make. Fried mozzarella and marinara sticks are swapped out for a chef’s salad. pizzas get a whole wheat crust. condiments are reduced in fat. and even canned fruit is out in, in favor of raw, fresher options.

with a 17 percent obesity rate for U.S. kids under 18, diabetes and heart problems threatens the livelihood of an enitre generation. while a recent study pegs the bulk of childhood diet problems on parents. but it hasn’t helped that educational outposts sanction the same food that’s making kids sick. at six cents a meal, the government will be forking over a major chunk of change so their improvements can be part of the solution.

nyc recycling champions

as we are approaching the end of the year, i’ve been bombarded with e-mails about who to donate to. so let me throw my two cents in about a program i’m excited about: a food project in NYC by GrowNYC: NYC Recycling Champions.

the goal is to develop a great school recycling program in each borough in nyc. a coordinator will work with faculty and administration to create outreach programs for students. then engage students in various learning programs and activities. the way this project and donation would work is if they make their goal of $10,000 and the pledge window ends sunday, december 11 at 10:14am est.

GrowNYC also created the compost program with my local greenmarket which i love so i’m excited to support other programs they do! so, if you have a little to share, consider this project. i hope they will reach their goal!

    Metabolically abnormal-making them more vulnerable to heart disease than their heavier counterparts. You need about 30 minutes of moderate-intensity physical activity five days a week for health.

charm city cakes + harry potter = explosive cakes

it has been a beautiful cake relationship between charm city cakes and harry potter. now that the last movie is coming out, the team pulled out all the stops for perhaps the last cake for the franchise.

this week, Charm City Cakes
recreated a half-destroyed Hogwarts castle cake for
the New York premiere of ”Harry Potter and the Deathly Hallows: Part 2″

“It’s got over 120 LED lights on it that are all on different circuits so they’re blinking at different moments, so it looks like it’s on fire, and then it’s got smoke machines that go through it, so smoke is billowing out of the towers,” says Duff. Rupert Grint cut the first slice at the premiere after party.

this is the second Hogwarts Castle cake by charm city cakes team baked for harry potter and they also made a cake of Hogwarts Express. i remember bcuz i saw them on Ace of Cakes!

the Los Angeles premiere of ”Harry Potter and the Order of the Phoenix”
(shown in Ace of Cakes: season 4, episode 1)

Duff, Anna, and Ben travel to Hollywood for the Los Angeles premiere. in LA, they complete the construction of massively scaled edible replica of Hogwarts castle as seen in the film. the cake was on display at the official Warner Bros. premiere party, and featured appearance from Harry Potter stars Daniel Radcliffe and Rupert Grint.

jamie oliver’s food revolution season 2 & “no sugar in milk” campaign

in jamie oliver’s food revolution season 2, he tackles food lunches in Los Angeles. even more than in season 1′s community in huntington, LA is challenging as the LAUSD refuses to let jamie enter their schools and learn about their lunch program. but jamie is stubborn and determined and i can’t wait to see how it turns out.

jamie just launched another campaign for healthy school food is getting rid of sugary milk in schools. from season 1, we saw how most students grab for chocolate or strawberry milk instead of regular or lowfat milk under the guise of “healthy drink” – after all, it’s milk! NOT SO – in a serving of chocolate milk, it’s 4 teaspoons of added sugar. yikes.

vegetarian nacho platter

whenever i was lazy and wanted to make something quick and easy, i would have a vegetarian nacho platter. i almost never use a microwave but this dish is an exception.

my version is healthier than nacho platters you’d find in restaurants. i used to use regular tortilla chips but now i like the soy and flaxseed tortillas from Trader Joe’s since it is packed with proteins, omega-3 and fiber. since tortilla chips usually have salt, i cut down the salt with a no salt salsa. then i add the spinach and bean toppings.

it is a yummy and fun dish in minutes!

Ingredients

  • bag of tortilla chips (try Trader Joe’s Soy & Flaxseed Tortillas)
  • 1 block muenster cheese
  • 1 jar of salsa, preferably no salt
  • 1 can black beans, drained
  • 10-ounce package frozen spinach, defrosted
  • crushed red pepper

Special equipment needed

  • Microwave
  • Microwaveable plate

Preparation

On a microwaveable plate, top as following:

  • a layer of nachos
  • a slice of muenster cheese on each nacho (slice as desired)
  • a spoonful salsa (approximately 1 tablespoon)
  • a small spoonful black beans (approximately 1 teaspoon)
  • a small spoonful spinach (approximately 2 teaspoons)
  • additional piece of cheese, if desired

Microwave plate for 1 minute. Remove from microwave (use glove in case plate is hot).

Sprinkle crushed red pepper on top, if desired Serve and enjoy!

sloppy lasagna

i was planning to make lasagna but since i had some leftover ground beef, i thought i’d try a meaty lasagna for dinner tonight! so i found this yummy sloppy lasagna recipe from rachael ray.

since i was originally going to make my vegetarian lasagna, i only had enough ingredients for the half of the sloppy lasagna recipe. so i decided to shake things up and have one layer of sloppy lasagna and one layer of my spinach lasagna! If you want to do this, use 1/2 of this meat sauce recipe and 1/2 of the spinach lasagna recipe.

vegetarian lasagna or meaty lasagna – or both, i love it!

Ingredients

For the pasta

  • 2 pounds curly edge lasagna noodles

For the meat sauce

  • 2 tablespoons extra virgin olive oil
  • 2 pounds ground beef
  • 1 medium onion, finely chopped
  • 1 small carrot, grated or finely chopped
  • 1 head garlic, finely chopped or grated
  • 2 fresh bay leaves
  • Freshly ground black pepper
  • 2 pinches ground cinnamon
  • 3 tablespoons tomato paste
  • 1 cup vegetable stock
  • 1 (28-ounce) can tomatoes
  • A handful basil leaves, torn
  • 4 tablespoons margarine
  • 4 tablespoons all-purpose flour
  • 2 cup milk, eyeball the amount
  • Freshly grated nutmeg, to taste
  • 1-1/2 cups grated Parmigiano-Reggiano
  • 2 cups fresh ricotta cheese

Preparation

Bring a large pot of water to a boil over medium heat. Break the pasta into irregular, larger than single bite-sized pieces. Put into boiling water and cook to a little shy of al dente. Drain and set aside in a large bowl.

Heat the extra-virgin olive oil in a heavy bottomed pot or large skillet over medium heat. Add the meat, press it into an even layer and brown it for 3 to 4 minutes before moving. Turn the meat and add the onions and grated carrot. Stir and cook a few minutes to soften, then add the garlic, bay leaves, salt and pepper, to taste, and the cinnamon. Cook for a couple of minutes, then stir in the tomato paste, wait for 1 minute then add the stock. Reduce for a minute more, then add the tomatoes, breaking them up as you stir. Reduce the heat to a simmer and add the basil.

While the sauce simmers, in a medium sauce pot, melt the butter over medium heat and whisk in the flour. Cook for 1 minute, then whisk in the milk and nutmeg, and season with salt, pepper, to taste. Let cook for a couple of minutes to thicken, then stir in 1/2 cup of the grated cheese and turn off the heat.

Heat a broiler.

Add the meat sauce to the bowl with the pasta and toss. Layer half of the pasta into a lasagna pan and scatter with dollops of fresh ricotta cheese. Top with remaining pasta. Pour the white sauce over the pasta and scatter the remaining 1 cup of the grated cheese over the top. Put under the broiler to brown and bubble. Remove from the broiler and serve.

cinnamon twists with cardamom-honey dip

i really loved the savory puff pastry twists from robin miller that i tried last year so i knew when i saw giada make this recipe that i would enjoy these cinnamon twist.

the cinnamon twists, as i imagined smelled and tasted sinful! the twists are flaky, buttery and cinnamony sweet. dipped in the cardamon-honey sauce, gives a light, refreshing kick and additional sweetness. i love it with or without the dip. yum!

do remember, puff pastry is a decadent treat, after all, it’s pre-made dough with layers of butter. so as hard as it may be, do eat in moderation!

Ingredients

For the cinnamon twists

  • 1 tablespoon ground cinnamon
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon ground cardamom – or -
    1/4 teaspoon ground cinnamon + 1/4 teaspoon ground nutmeg
  • 1 tablespoon light brown sugar
  • 1 (9 by 10-inch) sheet frozen puff pastry, thawed
    - cut into 24 (1 by 4-inch) pieces
    -  cut into 12 (2 by 4-inch) pieces and then score each down the middle
  • 1 egg white, beaten

For the sauce

  • 1/4 cup honey
  • 1/4 cup lemon juice
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom – or -
    1/4 teaspoon ground cinnamon + 1/4 teaspoon ground nutmeg

Preparation

For the cinnamon twists: place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Set aside.

In a shallow bowl, mix together the cinnamon, sesame seeds, cardamom, and brown sugar.

  • If you cut into 24 pieces: twist 2 pieces of dough together to form a rope-shape. Pinch the ends together to seal.
  • If you cut into 12 pieces and scored each in the middle, pull the top into the center through the score twice to create double twists.

Brush the dough with the beaten egg white and roll gently in the cinnamon mixture until coated. Place on the prepared baking sheet. Repeat with the remaining dough. Bake for 12 to 14 minutes until puffed and golden. Cool on a wire rack.

For the sauce: in a small bowl, whisk together the honey, lemon juice, powdered sugar, cinnamon, and cardamom until smooth. Pour into a small dipping bowl.

Arrange the pastries on a platter and serve with the dipping sauce.

breakfast and art for allie by jim’s pancakes

how can a 3-year old not have a great meal when presented with a beautiful art creation that is a feast for the eyes … and then get to eat it too? well, little allison has just that responsibility and she does it with a smile, much to the joy of her father, jim.

for the rest of us who don’t live in the household, we’re lucky to find his blog, jim’s pancakes. here, jim shares his artistic pancake creations. he even gives some construction tips so we can recreate his art.

harry potter theme park: three broomsticks

after you spent some money at the shops and experienced the rides, you will need to replenish. what better place to fill up than at three broomsticks restaurant!

your choices of main courses include: shepherd’s pie, fish and chips, cornish pasties, rotisserie smoked chicken platter, chargrilled rib platter, smoked turkey leg, and chicken salad. some of the dishes comes with a side salad, grilled corn-on-the-cob and/or roasted potatoes. if you have a group of people, there’s also the great feast that is a combination of everything!

the restaurant is roomy with indoor and outdoor seating spaces, the staff is friendly and attentive, and the food is wonderful. don’t forget … there’s butterbeer! after your feast, you’ll have all the energy you need to get back on line for another shop or ride at the harry potter theme park!
